2 cups butternut squash, peeled and diced
4 slices turkey bacon, chopped
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
1 tablespoon olive oil
2 cloves garlic, minced
1 onion, diced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, cook the turkey bacon over medium heat until crispy. Remove and drain on paper towels.
In the same skillet, add olive oil and sauté the garlic and onion until translucent.
Add diced butternut squash, salt, and pepper, cooking until the squash is tender.
In a large bowl, combine the cooked turkey bacon, squash mixture, and half the cheese. Transfer to a baking dish.
Top with breadcrumbs and the remaining cheese.
Bake for 25-30 minutes or until the top is golden brown.
Notes
For extra flavor, add spices like thyme or rosemary.
