  • 1 loaf baguette
  • 1 cup burrata cheese
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into 1/2 inch pieces and place on a baking sheet.
  3. Brush each slice with olive oil and toast them in the oven until golden brown, about 5-7 minutes.
  4. In a bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic glaze, salt, and pepper.
  5. After the bread is toasted, remove from the oven and top each slice with a generous spoonful of the tomato mixture.
  6. Add a piece of burrata cheese on top of each bruschetta.
  7. Drizzle with additional olive oil and serve immediately.
