  • 4 large russet potatoes
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup grated Gruyere cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Thinly slice the potatoes using a mandolin.
  3. In a saucepan, combine the heavy cream, garlic, salt, pepper, and thyme, and heat until just simmering.
  4. Layer the sliced potatoes in a baking dish, pouring some cream mixture over each layer.
  5. Sprinkle both types of cheese generously over the top layer of potatoes.
  6. Bake for 1 hour, or until the top is bubbly and golden brown.
  7. Let cool for a few minutes before serving.
