2 pounds beef chuck roast
4 cups beef broth
3 dried guajillo chilies
2 dried ancho chilies
1 onion, chopped
5 cloves garlic, minced
2 teaspoons cumin
2 teaspoons oregano
1 tablespoon apple cider vinegar
12 corn tortillas
1 cup chopped cilantro
1 lime, cut into wedges
Instructions
In a large pot, add the beef chuck roast, broth, guajillo and ancho chilies, onion, garlic, cumin, oregano, and apple cider vinegar. Bring to a boil then reduce heat and simmer until the meat is tender.
Remove the meat, shred it, and return it to the pot.
Warm up tortillas on a skillet, then fill with shredded meat and top with cilantro and lime juice.
Serve immediately with additional broth on the side.
