Ingredients

  • 2 pounds beef chuck roast
  • 4 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 tablespoon apple cider vinegar
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, add the beef chuck roast, broth, guajillo and ancho chilies, onion, garlic, cumin, oregano, and apple cider vinegar. Bring to a boil then reduce heat and simmer until the meat is tender.
  2. Remove the meat, shred it, and return it to the pot.
  3. Warm up tortillas on a skillet, then fill with shredded meat and top with cilantro and lime juice.
  4. Serve immediately with additional broth on the side.

Notes

  • For more heat, add additional dried chilies.
  • Let the beef marinate overnight for more flavor.
