  • 4 medium zucchinis
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into half-moons.
  3. In a bowl, mix together the breadcrumbs, cheese, garlic powder, salt, pepper, and red pepper flakes.
  4. Place the zucchini slices on a baking sheet and drizzle with olive oil.
  5. Sprinkle the breadcrumb mixture over the zucchini.
  6. Bake for 25-30 minutes or until the zucchini is tender and the topping is golden brown.
