- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1/2 cup shredded cheese
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Rub them with olive oil and sprinkle with salt.
- Bake in the oven for 45-60 minutes, or until fork-tender.
- Meanwhile, cook turkey bacon in a skillet until crispy. Remove and crumble.
- In the same skillet, add diced chicken ham and sauté for 5 minutes.
- Once sweet potatoes are done, cut them open and fluff with a fork.
- Top with chicken ham, crumbled turkey bacon, and shredded cheese.
- Return to the oven for an additional 5-10 minutes until the cheese is melted.
Notes
- For extra flavor, add some green onions on top before serving.
- You can also use regular bacon if preferred.
