Delicious baked sweet potatoes topped with turkey bacon and chicken ham for a delightful meal.

Ingredients

  • 2 large sweet potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1/2 cup shredded cheese
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Rub them with olive oil and sprinkle with salt.
  4. Bake in the oven for 45-60 minutes, or until fork-tender.
  5. Meanwhile, cook turkey bacon in a skillet until crispy. Remove and crumble.
  6. In the same skillet, add diced chicken ham and sauté for 5 minutes.
  7. Once sweet potatoes are done, cut them open and fluff with a fork.
  8. Top with chicken ham, crumbled turkey bacon, and shredded cheese.
  9. Return to the oven for an additional 5-10 minutes until the cheese is melted.

Notes

  • For extra flavor, add some green onions on top before serving.
  • You can also use regular bacon if preferred.
