A warm and hearty soup that combines the flavors of a classic bacon cheeseburger into a comforting, dairy-free and paleo-friendly meal.

Ingredients

  • 4 slices bacon
  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 1 cup cauliflower, chopped
  • 1 cup coconut milk
  • 1 teaspoon paprika
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • 1 cup shredded dairy-free cheese (optional)

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add ground beef to the pot and brown it.
  3. Add onion and garlic, and sauté until translucent.
  4. Stir in beef broth, diced tomatoes, and cauliflower. Bring to a boil.
  5. Reduce heat, add coconut milk, paprika, and mustard. Simmer for 10-15 minutes.
  6. Season with salt and pepper. Serve hot, topped with crumbled bacon and dairy-free cheese if desired.

Notes

  • If you want a thicker soup, blend a portion of it and add it back to the pot.
  • Feel free to add other vegetables like carrots or bell peppers for extra flavor.
